Tasting Notes
A golden wine with a remarkable tertiary evolution, with aromas of good wood, vanilla and spices, especially pepper and a touch of cinnamon. The palate is robust and elegant with a long finish. This Colheita is recommended as an aperitif with game or salmon pâtés or with rolled plums and bacon. Drunk as a digestif, it pairs well with strong cheeses, toasted almonds and butter.
Winemaking Process
Fermented with partial destemming at a controlled temperature (24-28ºC) when the must reaches the desired sweetness value, fermentation is interrupted by the addition of brandy (77%), then aged in oak for a minimum of 7 years in warehouses in Vila Nova de Gaia until bottling.
