Tasting Notes
The aroma is very elegant, with notes of green citrus being enveloped by the complexity of the “sur lies” cellar ageing, reminiscent of toasted bread and almonds. The palate tastes of soft mousse and crunchy acidity, forming an elegant and well-balanced whole.
Winemaking Process
Careful selection of Chardonnay grapes. Gentle pressing of whole grapes and separation of the best fractions of tear must. Fermentation in stainless steel vats at a controlled temperature. Second fermentation in bottle according to the traditional method. Prolonged “sur lies” ageing to achieve greater complexity and elegance.
